Here is a tasty treat that can be adapted for everyone.
Ingredients
For this recipe you need either filo pastry, shortcrust pastry or several slices of day old bread. If you are using bread, cut the crust off and roll the slices as thin as possible.
For the filling, use anything you like. Left over vegetables mixed with your favorite cheese. Dried fruit, mixed with a pinch of your favorite spices, a tiny bit of brown sugar. You can also use chopped chicken, pork, seafood or any other meat, again, mix some cheese with it (helps to bind).
Method
Very simple. Lay your filling along the base leaving about a quarter of inch (1cm) at either end empty.
Gently roll up and pinch the ends together. You can use milk or egg and milk mixture to help with the pinch seal.
Cooking
Cook for 5-10 minutes in a fairly hot oven. Turn over and cook a further 5 minutes. You want the pastry/bread to be a nice even golden brown. You can brush with melted butter prior to cooking if you prefer - but not too much.
Storage
If storing, leave until cooled completely. Store in an air tight container with paper towel between layers (to absorb and moisture).
These can be eaten while still warm. You can make dipping sauces to go with them.
The kids will consider them a treat (even the veg and cheese ones) and lap them up. They are great for kids lunch boxes and a fabulous way to use up and leftovers.
